-Beat the egg yolks, salt and sugar until light yellow. Heat the cream but do not boil.

-Gradually stir the egg-sugar  into the cream and heat to 75 °C, stirring constantly. Remove from the stove and let cool to refrigerator.

-Remove the stalk from the strawberries. Mix in a bowl with lemon juice and vanilla and puree finely with a hand blender. Fold the strawberry puree into the ice cream mix.

-Put the ice cream mass in the ice cream maker and let it freeze for about 1 hour.


For a little more texture in your ice cream, you can simply stir a few chopped strawberries into the mix. Feel free to try it out on pieces of different sizes, depending on whether you prefer a softer or a coarser mass.
